  • 1 bunch radishes, trimmed and halved (some left whole)
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons whole grain mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red apple vinegar
  • 1 garlic clove, minced
  • Optional: 1 teaspoon honey
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, combine trimmed asparagus and halved radishes. Drizzle with 2 tablespoons olive oil and season with salt and pepper.
  3. Roast for 20–25 minutes until tender and lightly browned, turning halfway through.
  4. In a mixing bowl, whisk together the whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, remaining olive oil, and honey (if using) until emulsified. Season to taste.
  5. Arrange roasted vegetables on a platter and drizzle generously with the vinaigrette. Garnish with chopped parsley before serving.
