  • 12 oz raw sliced Turkey Bacon
  • 1 ¼ lbs thinly sliced gala apples
  • 1 cup pecans
  • 2 shallots, thinly sliced
  • 5 oz mixed greens
  • Fresh arugula
  • 6 oz crumbled blue cheese
  • Maple syrup
  • Apple cider vinegar

Instructions

  1. Preheat the oven to 400°F. Bake Turkey Bacon on a sheet pan for about 25 minutes until crisp; set aside.
  2. Raise oven temperature to 425°F. Roast sliced apples on the same sheet pan for 15 minutes until golden brown; set aside.
  3. In a skillet with Turkey Bacon fat, toast pecans over medium heat until fragrant; set aside.
  4. Sauté shallots in olive oil until caramelized. Stir in maple syrup and apple cider vinegar; simmer briefly.
  5. In a bowl, combine mixed greens and arugula with roasted apples, pecans, Turkey Bacon, blue cheese, and raisins. Drizzle with vinaigrette and toss gently.
