  • 8 oz pasta (penne or fusilli)
  • 1 lb shrimp (peeled and deveined)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 cup red onion (thinly sliced)
  • 1 cup bell peppers (diced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a skillet, heat a splash of olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for about 3 minutes until pink and opaque.
  3. Chop cherry tomatoes, cucumber, red onion, and bell peppers into bite-sized pieces.
  4. Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl until combined.
  5. In a large bowl, mix cooled pasta, cooked shrimp, chopped vegetables, and parsley. Drizzle with dressing and toss gently to coat.
  6. Cover and chill in the fridge for about an hour before serving.
