- 1 lb shrimp (peeled and deveined)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1/2 cup red onion (thinly sliced)
- 1 cup bell peppers (diced)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
- In a skillet, heat a splash of olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for about 3 minutes until pink and opaque.
- Chop cherry tomatoes, cucumber, red onion, and bell peppers into bite-sized pieces.
- Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl until combined.
- In a large bowl, mix cooled pasta, cooked shrimp, chopped vegetables, and parsley. Drizzle with dressing and toss gently to coat.
