- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 large carrot, diced
- 4 cups vegetable broth
- 1 cup quinoa, rinsed
- 2 cups fresh or frozen corn kernels
- 1 can (14.5 oz) coconut milk
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a heavy-bottomed pot, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic.
- Stir in chopped celery and diced carrot; sauté for about 5 minutes until softened.
- Pour in vegetable broth and bring to a boil. Add rinsed quinoa, reduce heat to low, and simmer for 15 minutes.
- Mix in corn kernels and coconut milk along with smoked paprika, thyme, salt, and pepper. Simmer for an additional 5 minutes.
