Ingredients

  • All-purpose flour
  • Pumpkin pie spice
  • Granulated sugar
  • Eggs
  • Canned pumpkin puree
  • Espresso or strong coffee
  • Unsalted butter
  • Cream cheese
  • Sweetened condensed milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. Whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt in one bowl.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, followed by vanilla extract and buttermilk. Mix in pumpkin puree.
  4. Combine dry ingredients with wet mixture until just blended.
  5. Divide batter between pans and bake for about 38 minutes or until a toothpick comes out clean. Cool on a rack.
  6. Prepare soaking mixture of espresso, milk, sweetened condensed milk, pumpkin pie spice, and vanilla; soak cooled cakes for at least an hour before frosting.
  7. Beat softened butter and cream cheese together for frosting; mix in powdered sugar, vanilla extract, espresso powder, and pumpkin pie spice.
  8. Frost layers as desired after soaking.
