  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup mini marshmallows
  • 1/2 cup graham cracker pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy (about 2–3 minutes). Add pumpkin purée, vanilla extract, and egg yolk; mix until combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt until blended.
  4. Gradually add dry ingredients to wet mixture and stir until just combined.
  5. Gently fold in chocolate chips, mini marshmallows, and graham cracker pieces.
  6. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet about 2 inches apart.
  7. Bake for 10–12 minutes or until edges are set but centers remain soft. Allow cookies to cool before serving.
