  • 6 tortillas (8 inches)
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup butter (melted)
  • 4 oz cream cheese (softened)
  • 3/4 cup canned pumpkin puree
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pecans for garnish (chopped)

Instructions

  1. Preheat oven to 400°F and cut tortillas into rounds using a cookie cutter.
  2. Mix granulated sugar and cinnamon in a shallow dish.
  3. Brush tortillas with melted butter and coat with the cinnamon-sugar mixture.
  4. Bake tortilla rounds in an upside-down muffin tin for about 10 minutes until golden brown.
  5. Prepare whipped cream by beating heavy whipping cream with powdered sugar until stiff peaks form.
  6. In another bowl, blend softened cream cheese, powdered sugar, pumpkin puree, vanilla extract, and pumpkin pie spice until smooth.
