Made with moist pumpkin-flavored cake and creamy frosting, each pop is coated in vibrant orange candy melts, making them as delicious as they are visually appealing. Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 12 ounces orange candy melts
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine pumpkin puree, sugar, and eggs; blend until smooth.
  2. In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Gradually mix into wet ingredients until combined.
  3. Pour batter into a greased baking sheet and bake for about 25 minutes or until a toothpick comes out clean. Let cool completely.
  4. Crumble cooled cake into a bowl and mix in frosting until the mixture holds together when shaped.
  5. Roll into one-inch balls and freeze for at least one hour.
  6. Melt candy melts according to package instructions. Dip each frozen ball to coat thoroughly; allow excess to drip off.
  7. While still wet, sprinkle with finely chopped parsley for garnish. Allow to set completely before serving.
