  • 1 cup finely chopped walnuts
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter (melted)
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 16 oz cream cheese (room temperature)
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • For streusel: sugars, oats, flour, butter, vanilla

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper.
  2. Mix walnuts, almond flour, sugar, and melted butter; press into the bottom of the prepared dish for the crust.
  3. In a bowl, blend cream cheese and sugar until smooth; add eggs one at a time.
  4. Reserve 1½ cups of mixture and spread it over the crust.
  5. Mix remaining batter with pumpkin puree and spices; layer on top without mixing.
  6. Prepare streusel by combining sugars, oats, flour, butter, and vanilla; sprinkle over pumpkin layer.
  7. Bake for 60-70 minutes until set. Cool then chill before slicing.
