  • 8 oz wide Lo Mein noodles
  • 1 tablespoon peanut oil
  • 1 pound ground beef
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons fruit juice
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Cook Lo Mein noodles according to package instructions. Rinse under cold water and set aside.
  2. In a skillet over medium heat, add peanut oil. Once hot, add ground beef and sliced green onions; brown until fully cooked.
  3. In a bowl, whisk together chicken broth, fruit juice, dark soy sauce, garlic, ginger, sesame oil, and sriracha until combined.
  4. Add cooked noodles and coleslaw mix to the skillet with browned beef. Pour in the prepared sauce.
  5. Toss everything together gently for about 2–3 minutes until well-coated.
  6. Remove from heat and garnish with remaining green onions before serving.
