- 8 oz wide Lo Mein noodles
- 1 tablespoon peanut oil
- 1 pound ground beef
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons fruit juice
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook Lo Mein noodles according to package instructions. Rinse under cold water and set aside.
- In a skillet over medium heat, add peanut oil. Once hot, add ground beef and sliced green onions; brown until fully cooked.
- In a bowl, whisk together chicken broth, fruit juice, dark soy sauce, garlic, ginger, sesame oil, and sriracha until combined.
- Add cooked noodles and coleslaw mix to the skillet with browned beef. Pour in the prepared sauce.
- Toss everything together gently for about 2–3 minutes until well-coated.
- Remove from heat and garnish with remaining green onions before serving.
