- 1 lb boneless, skinless chicken thighs (cubed)
- 3 tablespoons coconut oil
- 1 yellow onion (chopped)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 3 garlic cloves (minced)
- 1 tablespoon fresh ginger (grated)
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 1/2 cups fresh pineapple (cubed)
- 1/2 cup frozen peas
- Salt to taste
- Fresh lime juice, green onions, and sesame seeds for garnish
Instructions
- Season the cubed chicken with salt and let it rest for about 10-15 minutes.
- Heat 2 tablespoons of coconut oil in a wok or skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
- In the same pan, add the remaining tablespoon of coconut oil. Sauté onion until translucent, then add bell peppers, garlic, and ginger; cook for another 2–3 minutes.
- Deglaze with soy sauce; stir in the chilled rice, honey, pineapple cubes, and cooked chicken. Toss well to combine on low heat for about 5 minutes.
- Add frozen peas and lime juice; stir gently until warmed through. Serve hot with garnishes.
