  • 4 cups cooked brown or white rice (chilled)
  • 1 lb boneless, skinless chicken thighs (cubed)
  • 3 tablespoons coconut oil
  • 1 yellow onion (chopped)
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 1 tablespoon fresh ginger (grated)
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 1/2 cups fresh pineapple (cubed)
  • 1/2 cup frozen peas
  • Salt to taste
  • Fresh lime juice, green onions, and sesame seeds for garnish

Instructions

  1. Season the cubed chicken with salt and let it rest for about 10-15 minutes.
  2. Heat 2 tablespoons of coconut oil in a wok or skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
  3. In the same pan, add the remaining tablespoon of coconut oil. Sauté onion until translucent, then add bell peppers, garlic, and ginger; cook for another 2–3 minutes.
  4. Deglaze with soy sauce; stir in the chilled rice, honey, pineapple cubes, and cooked chicken. Toss well to combine on low heat for about 5 minutes.
  5. Add frozen peas and lime juice; stir gently until warmed through. Serve hot with garnishes.
