  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic
  • 1/2 red bell pepper (cut into bite-size pieces)
  • 1/2 medium onion (sliced or cut into bite-size pieces)
  • 1/2 teaspoon garlic powder
  • Pepper (to taste)
  • 3 tablespoons cornstarch

Instructions

  1. Prepare the sauce by combining reserved pineapple juice, honey, soy sauce, rice vinegar, ginger, minced garlic, and cornstarch in a bowl; whisk until smooth.
  2. Chop veggies and cut chicken into bite-sized pieces. Toss chicken with garlic powder and pepper; coat with cornstarch.
  3. Heat olive oil in a deep skillet over medium-high heat. Cook chicken in batches until browned and cooked through; set aside.
  4. In the same skillet, sauté drained pineapple chunks with red bell pepper and onion until tender-crisp.
  5. Return chicken to skillet, pour in the sauce, and let bubble until thickened. Serve immediately over rice or noodles.
