  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger

Instructions

  1. Heat olive oil in a skillet over medium heat. Cook cubed chicken until golden brown; remove from skillet.
  2. Sauté onion, garlic, and red bell pepper in the same skillet until softened.
  3. Add cubed pineapple; cook for 2 minutes until slightly caramelized.
  4. Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  5. Return cooked chicken to the skillet and mix well to combine flavors. Heat through.
  6. Serve topped with sliced green onions and sesame seeds.
