  • 2 pounds mixed baby potatoes
  • 2 cups fresh basil
  • 2 tablespoons toasted pine nuts
  • 1/3 cup grated parmesan cheese
  • 1/4 cup extra virgin olive oil
  • Zest and juice of 1 lemon
  • 4 hard-boiled eggs (optional)

Instructions

  1. Boil the potatoes and garlic in a large pot until fork-tender (10-15 minutes). Drain and steam in the pot for 20 minutes.
  2. Blend cooked garlic, basil, pine nuts, parmesan, olive oil, lemon zest, juice, and red pepper flakes until smooth.
