  • 6 pieces bone-in skin-on chicken
  • 1 teaspoon salt
  • 23 tablespoons olive oil
  • 1 red onion
  • 4 garlic cloves
  • 1 ½ cups basmati rice
  • 2 cups water
  • ¼ teaspoon turmeric
  • 1½ teaspoons cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon black pepper
  • ½ teaspoon cardamom
  • ½ teaspoon allspice
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • Almonds (for garnish)

Instructions

  1. Soak basmati rice in water for at least 30 minutes.
  2. Coat chicken with salt and spice blend evenly.
  3. Sauté chopped onion and garlic in olive oil until fragrant.
  4. Cook marinated chicken in the same pan for about 5 minutes per side until golden brown.
  5. Boil water in the pan, add soaked rice and turmeric.
  6. Simmer until rice is cooked through.
  7. Combine cooked chicken with rice to absorb flavors.
  8. Garnish with fried onions and almonds before serving.
