  • 1 cup fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup cold butter, cubed
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined; small lumps are okay.
  5. Gently fold in the diced pears and cranberries.
  6. For the streusel topping, mix flour, brown sugar, cold butter, and cinnamon until crumbly.
  7. Fill each muffin cup two-thirds full with batter and top generously with streusel.
  8. Bake for 20-25 minutes or until golden brown; a toothpick should come out clean.
  9. Allow muffins to cool in the pan for about 5 minutes before transferring them to wire racks.
