  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3/4 cup smooth peanut butter
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate chips
  • 2 oz heavy cream
  • 1/3 cup water
  • 3/4 cup granulated sugar
  • 3/4 cup light corn syrup
  • 3 large egg whites
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In one bowl, whisk together flour, baking soda, and sea salt. In another bowl, cream together unsalted butter, granulated sugar, and light brown sugar until fluffy. Mix in the egg and vanilla extract.
  3. Gradually add the dry ingredients to the wet mixture until just combined.
  4. Scoop tablespoon-sized amounts of dough onto prepared baking sheets and bake for 12 minutes or until edges are golden.
  5. Prepare the chocolate ganache by melting semi-sweet chocolate chips with heavy cream over low heat.
  6. Make marshmallow fluff by cooking water, granulated sugar, light corn syrup, egg whites, cream of tartar, and vanilla extract until soft peaks form.
  7. Assemble the cookies by spreading chocolate ganache on one cookie half, topping it with marshmallow fluff, then sandwiching with another cookie half.
