  • 800 g full-fat cream cheese
  • 250 g granulated sugar (divided)
  • 110 g all-purpose flour
  • 70 g butter (plus additional for crust)
  • 200 g sour cream
  • 4 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the peach filling by slicing peaches and mixing them with granulated sugar and cinnamon in a bowl.
  3. Make the crumble topping by combining flour, dark brown sugar, and butter until crumbly.
  4. Prepare the cookie crust by crushing digestive or graham crackers and mixing with melted butter and sugar; press into a springform pan.
  5. For the cheesecake filling, beat room temperature cream cheese until smooth before gradually adding sugar, sour cream, cornstarch, vanilla extract, and eggs.
  6. Layer half of the cheesecake filling over the crust, followed by half of the peach mixture and crumble topping; repeat layers.
