  • ⅓ cup brown sugar (packed)
  • ½ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter.

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8×8 or 9×9-inch baking pan.
  2. Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly; refrigerate.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream softened butter with both sugars until fluffy. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined. Gently fold in the diced peaches.
  6. Spread batter into the prepared pan and sprinkle with streusel topping.
  7. Bake for 40–50 minutes until golden brown and a toothpick comes out clean.
