  • 1 medium cucumber, chopped
  • 1 pint grape tomatoes, halved
  • 1 small bell pepper, chopped
  • 1/4 cup finely diced red onion
  • 1 cup Italian dressing
  • 2/3 cup crumbled feta cheese
  • 1/4 cup sliced black olives
  • 3 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini pasta in boiling salted water until al dente. Drain and rinse under cold water.
  2. Chop the cucumber, grape tomatoes, bell pepper, and red onion into small pieces.
  3. In a large bowl, combine cooled pasta with chopped vegetables. Add Italian dressing, feta cheese, olives, and parsley. Season to taste with salt and black pepper.
  4. Toss everything together until well mixed. Chill in the fridge for at least an hour before serving or enjoy immediately.
