  • 4 chicken drumsticks
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 1 ½ cups uncooked rice
  • 1 ½ cups chicken stock
  • 1 ¼ cups water
  • Oil spray
  • Fresh chopped parsley (for garnish)
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • Black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Spread chopped onion in a baking dish and top with butter pieces.
  2. Roast onions for about 15 minutes until lightly browned.
  3. In a bowl, mix paprika, thyme, garlic powder, onion powder, salt, and pepper. Rub this seasoning over each chicken drumstick.
  4. Remove the dish from the oven; sprinkle uncooked rice over onions. Pour in chicken stock and water; add minced garlic.
  5. Arrange seasoned chicken on top of the rice mixture; cover with foil.
  6. Bake covered for 30 minutes. Remove foil, spray oil on drumsticks, and bake uncovered for an additional 10-15 minutes until golden brown.
  7. Garnish with fresh parsley before serving.
