Ingredients

Scale
  • 1 lb Italian or smoked sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and brown for about 4–5 minutes. Remove from skillet.
  2. In the same skillet, sauté diced onion and bell pepper for 3–4 minutes until softened. Stir in minced garlic for an additional 30 seconds.
  3. Add smoked paprika and black pepper; incorporate uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; return browned sausage to the skillet.
  5. Bring to a boil, then cover and reduce heat to low. Simmer for 20–22 minutes until rice is tender and liquid absorbs.
