Ingredients
- 8 oz salted butter
- 2 cups heavy cream
- 1 1/4 cup sweetener
- 1/2 cup raw cacao butter
- 1 cup peanut butter powder
- 16 oz cream cheese
- 2 tsp Vegan Gelatin
- 3 oz cold water
- 2/3 cup peanut flour or peanut butter powder
- 1/3 cup almond flour
- 1/3 cup butter
- 1/4 cup powdered sweetener
Instructions
- In a medium saucepan, combine salted butter, heavy cream, and sweetener over medium heat until bubbly. Add cacao butter and peanut butter powder; whisk until smooth. Refrigerate for at least 2 hours.
- Dissolve Vegan Gelatin in cold water. Whip cream cheese until fluffy; mix in dissolved gelatin and chilled peanut mixture.
- Combine crust ingredients and press into an 8-inch springform pan. Pour cheesecake filling over crust.
- Chill for at least 8 hours or overnight before unmolding.
