  • 1 cup butter
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Line an 8-inch or 9-inch baking dish with parchment paper.
  2. In a saucepan over medium heat, melt the butter and brown sugar together until smooth; stir in vanilla.
  3. Add rolled oats to the mixture and cook on low heat for about 3-4 minutes.
  4. Press half of the oat mixture into the prepared dish for the base layer.
  5. In a microwave-safe bowl, melt together peanut butter and chocolate chips until smooth.
  6. Pour melted chocolate over the base layer; reserve some for drizzling later.
  7. Layer remaining oat mixture over chocolate and drizzle with reserved chocolate.
  8. Refrigerate for at least 2-3 hours before cutting into squares.
