  • 4 cups chicken broth
  • 8 napa cabbage leaves (sliced)
  • 5 oz mushrooms (sliced, optional)
  • 1/2 block soft tofu (sliced)
  • 2 green onions (sliced)
  • 2 cloves garlic (smashed)
  • 4 slices ginger
  • 2 teaspoons light soy sauce
  • 1/2 teaspoon chicken bouillon powder (or salt)
  • 1/4 teaspoon white pepper
  • 1 teaspoon sesame oil

Instructions

  1. In a medium-sized pot, heat the chicken broth over medium-high heat. Add ginger, green onions, garlic, and light soy sauce.
  2. Once boiling, add the white parts of the napa cabbage and any mushrooms if using; cook for four minutes until softened.
  3. Stir in the green parts of the napa cabbage and tofu; cook for another two to three minutes. If using enoki mushrooms, add them now.
  4. Season with chicken bouillon powder (or salt), white pepper, and drizzle with sesame oil. Adjust seasoning as desired before serving hot.
