  • 8 ounces of spaghetti
  • 4 slices of thick turkey bacon (cut into small pieces)
  • 1 tablespoon of miso paste
  • 1 teaspoon of red chili flakes
  • 1 teaspoon of freshly ground black pepper
  • ½ cup of hot reserved pasta water
  • 2 eggs
  • 2 egg yolks
  • 1 cup plus more for garnish of Parmigiano Reggiano cheese
  • Finely chopped green parsley

Instructions

  1. Cook the spaghetti in salted boiling water until al dente, reserving ½ cup of pasta water before draining.
  2. In a skillet over medium heat, cook turkey bacon until crispy; remove from heat but keep in the skillet.
  3. In a bowl, whisk together eggs, egg yolks, miso paste, black pepper, and half the cheese until smooth. Gradually mix in hot reserved pasta water.
  4. Add drained spaghetti to the skillet with bacon over low heat. Pour in egg mixture while tossing quickly to coat without scrambling.
  5. Serve immediately in bowls topped with remaining cheese and parsley.
