Ingredients
- 8 oz refrigerated cheese tortellini
- 4 oz provolone cheese (cut into small squares)
- 50 thin slices salami
- 25 pimiento-stuffed green olives
- 25 small cherry tomatoes
- 1/2 cup olive oil
- 1/4 cup red apple vinegar
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon honey
- 2 teaspoons lemon juice
- 1 & 1/2 teaspoons dried Italian seasoning
- 3/4 teaspoon garlic powder
- pinch of cracked red pepper flakes
- pinch of black pepper
Instructions
- Prepare the dressing by combining all marinade ingredients in a jar; shake well until emulsified.
- Cook the tortellini according to package instructions; drain and rinse with cold water.
- Marinate the cooked tortellini with the dressing in a ziploc bag for at least 3 hours or overnight.
- Assemble kabobs by threading marinated tortellini, folded salami, cheese squares, olives or cherry tomatoes onto cocktail skewers.
