- 1 tbsp Olive Oil
- 1 lb Lean Ground Beef
- 1 cup Yellow Onion (chopped)
- 3 cloves Garlic (minced)
- 1 medium Zucchini (diced)
- 1 Red Bell Pepper (diced)
- 1 pint Cherry Tomatoes (halved)
- 1/2 cup Kalamata Olives (halved)
- 1 tsp Dried Oregano
- 1/2 tsp Salt (or to taste)
- 1/4 tsp Black Pepper (or to taste)
- 1 tbsp Red Apple Vinegar
- 1 tbsp Fresh Lemon Juice
- 1/2 cup Feta Cheese (crumbled)
- 1/4 cup Fresh Parsley (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef to the skillet, breaking it apart as it cooks until browned. Drain excess grease.
- Sauté chopped onion for 3-4 minutes until softened, then add minced garlic and cook for an additional minute.
- Stir in diced zucchini and red bell pepper; cook for 5-7 minutes until tender-crisp.
- Mix in halved cherry tomatoes, Kalamata olives, oregano, salt, and pepper; simmer for 5 minutes.
