  • 1 tbsp Olive Oil
  • 1 lb Lean Ground Beef
  • 1 cup Yellow Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 medium Zucchini (diced)
  • 1 Red Bell Pepper (diced)
  • 1 pint Cherry Tomatoes (halved)
  • 1/2 cup Kalamata Olives (halved)
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt (or to taste)
  • 1/4 tsp Black Pepper (or to taste)
  • 1 tbsp Red Apple Vinegar
  • 1 tbsp Fresh Lemon Juice
  • 1/2 cup Feta Cheese (crumbled)
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef to the skillet, breaking it apart as it cooks until browned. Drain excess grease.
  3. Sauté chopped onion for 3-4 minutes until softened, then add minced garlic and cook for an additional minute.
  4. Stir in diced zucchini and red bell pepper; cook for 5-7 minutes until tender-crisp.
  5. Mix in halved cherry tomatoes, Kalamata olives, oregano, salt, and pepper; simmer for 5 minutes.
  6. Remove from heat; stir in red apple vinegar and lemon juice. Top with feta cheese and parsley before serving.
