  • 1 (15 ounce) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup grape or cherry tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper to taste

Instructions

  1. Drain and rinse the chickpeas under cold water; add to a large salad bowl.
  2. Chop cucumbers, red onion, red bell pepper, and halve the tomatoes; add each to the bowl.
  3. Finely chop fresh oregano and parsley; combine with Kalamata olives in the bowl.
  4. Crumble the feta cheese into the mixture.
  5. In a small bowl, whisk together olive oil, lemon juice, and minced garlic; pour over the salad and toss gently.
  6. Season with salt and pepper to taste and serve chilled or at room temperature.
