Ingredients
- 1 (15 ounce) can chickpeas (rinsed and drained)
- 2 mini cucumbers (chopped)
- 1 tablespoon red onion (chopped)
- 1 tablespoon fresh oregano (chopped)
- 1 tablespoon fresh parsley (chopped)
- 1/2 red bell pepper (chopped)
- 1 cup grape or cherry tomatoes (halved)
- 1/2 cup Kalamata olives
- 3.5 ounces feta cheese
- 2 tablespoons olive oil
- 1/2 tablespoon lemon juice
- 1 clove garlic (minced)
- Salt & pepper to taste
Instructions
- Drain and rinse the chickpeas under cold water; add to a large salad bowl.
- Chop cucumbers, red onion, red bell pepper, and halve the tomatoes; add each to the bowl.
- Finely chop fresh oregano and parsley; combine with Kalamata olives in the bowl.
- Crumble the feta cheese into the mixture.
- In a small bowl, whisk together olive oil, lemon juice, and minced garlic; pour over the salad and toss gently.
- Season with salt and pepper to taste and serve chilled or at room temperature.
