Ingredients
- 1 kg skinless, boneless chicken thighs
- 1 large brown onion
- 4 cloves garlic
- 800 g crushed tomatoes
- 250 ml chicken stock
- 2 large zucchini
- 2 large red bell peppers
- ½ cup Kalamata olives
- Optional: 200 g crumbled feta cheese
Instructions
- Preheat oven to 180°C (355°F).
- Trim chicken thighs, cut into cubes, and season with salt and pepper.
- Brown the chicken in olive oil in a Dutch oven over high heat; set aside.
