  • 34 ounces sun-dried tomatoes (chopped)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 3 ounces tomato paste
  • 4 cups chicken broth
  • 2 cups dry rotini pasta
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil (chopped)
  • Salt & pepper to taste

Instructions

  1. Prep all ingredients: dice onion, mince garlic, chop sun-dried tomatoes, and shred chicken if necessary.
  2. In a large pot over medium heat, sauté the diced onion and minced garlic until soft and slightly browned.
  3. Stir in the chopped sun-dried tomatoes and basil.
  4. Add the tomato paste and cook for one minute before mixing in the shredded chicken.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to simmer and season with salt, pepper, and Italian seasoning.
  6. Add dry rotini pasta and cook according to package instructions (10-12 minutes).
  7. Once pasta is cooked, turn off heat and stir in heavy cream; adjust seasoning as needed.
  8. Ladle soup into bowls and garnish with parmesan cheese if desired.
