Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream softened butter and sugar until fluffy. Beat in eggs and vanilla, then mix in milk and mango purée.
- Gradually combine dry ingredients with wet ingredients until smooth.
- Fill each cupcake liner about three-quarters full and bake for 18–20 minutes until golden.
- Cool completely before filling with strawberry jam using a piping bag.
- Prepare the frosting by beating softened butter and gradually adding powdered sugar. Mix in cream and flavorings.
- Divide frosting into three sections: one plain, one with mango purée, and one with strawberry purée.
- Pipe the frosting onto cupcakes to create a sunset swirl effect.
