  • 3 cups powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp mango purée (for frosting)
  • 2 tbsp strawberry purée (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy. Beat in eggs and vanilla, then mix in milk and mango purée.
  4. Gradually combine dry ingredients with wet ingredients until smooth.
  5. Fill each cupcake liner about three-quarters full and bake for 18–20 minutes until golden.
  6. Cool completely before filling with strawberry jam using a piping bag.
  7. Prepare the frosting by beating softened butter and gradually adding powdered sugar. Mix in cream and flavorings.
  8. Divide frosting into three sections: one plain, one with mango purée, and one with strawberry purée.
  9. Pipe the frosting onto cupcakes to create a sunset swirl effect.
