  • 2 tablespoons olive oil
  • 1.25-ounce packet taco seasoning
  • 4 cups romaine lettuce
  • 1 medium Hass avocado
  • 1 cup shredded cheese (Monterey Jack and cheddar blend)
  • 1/2 cup canned corn
  • 1/2 cup canned black beans
  • For the dressing: mayonnaise, sour cream, lime juice, cilantro

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces seasoned with taco seasoning. Cook for about 5 minutes until fully cooked. Set aside.
  2. On a large platter, layer romaine lettuce and top with diced tomatoes, corn, black beans, avocado, shredded cheese, crushed tortilla chips, and cooked chicken.
  3. In a small bowl, whisk together mayonnaise, sour cream, lime juice, and remaining taco seasoning to make the dressing. Stir in minced cilantro.
