  • 8 oz pasta (cooked)
  • 2 zucchini (diced)
  • 4 garlic cloves (minced)
  • Juice and zest of 1 lemon
  • 3 tbsp butter
  • 1/4 cup parmesan cheese (grated)
  • Salt and black pepper to taste
  • Optional: 1/3 cup toasted pine nuts

Instructions

  1. Cook pasta according to package instructions. If desired, toast pine nuts in a small skillet over medium-low heat until golden.
  2. In a large skillet, melt 2 tbsp of butter over medium heat. Add diced zucchini and salt; sauté for about 3-4 minutes until soft.
  3. Stir in the minced garlic and additional 1 tbsp of butter; cook for another minute. Add lemon juice, zest, red pepper flakes, and black pepper; mix well.
  4. Combine the cooked pasta with the zucchini mixture in the skillet. Toss everything together until evenly coated. Serve topped with parmesan cheese and toasted pine nuts if using.
