  • 1 1/2 cup lemon juice (juice from 8 lemons)
  • 2 cups white sugar
  • 4 eggs
  • 4 egg yolks
  • 1/8 teaspoon salt
  • 1 cup unsalted butter, cut into cubes
  • 1/2 teaspoon vanilla extract
  • 3 (1-inch) strips of lemon peel
  • 1/2 cup lemon juice (for syrup)
  • 2/3 cup lemon-flavored syrup (using fruit juice instead of limoncello)
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 3 (8-ounce) containers mascarpone cheese
  • 1 Tbsp lemon zest
  • 10 ounces crisp ladyfingers

Instructions

  1. Prepare the Lemon Curd: In a non-reactive saucepan, combine lemon juice, 2 cups sugar, eggs, egg yolks, and salt. Cook while stirring over medium heat until thickened. Remove from heat, strain into a bowl, and stir in butter and vanilla. Chill.
  2. Make the Syrup: Combine lemon juice and remaining sugar in a saucepan. Boil over medium-high heat until dissolved, then cool down.
  3. Prepare the Mascarpone Filling: Beat heavy cream and powdered sugar until stiff peaks form. Mix mascarpone with lemon zest, then fold in chilled lemon curd and whipped cream until combined.
  4. Assemble: Layer half of the ladyfingers in a baking dish, brush with syrup, and add layers of curd and mascarpone filling. Repeat with remaining ingredients and top with reserved curd.
  5. Chill for 6-8 hours before serving.
