  • 1/4 teaspoon lemon zest
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  2. Form the dough into a ball, wrap in plastic, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 350°F (175°C). Roll out the dough to about 1/8-inch thick; cut into circles.
  4. Bake on parchment-lined baking sheets for 8-10 minutes until lightly golden. Cool completely.
  5. In a saucepan, combine lemon juice, granulated sugar, egg yolk, cornstarch, and zest; cook until thickened then cool.
  6. Beat egg whites until foamy; add cream of tartar and gradually mix in sugar until stiff peaks form.
  7. Spoon lemon filling onto cookies and top with meringue. Broil for 1-2 minutes until golden brown.
