  • 2 large egg whites
  • Cream of tartar

Instructions

  3. Form dough into a ball, wrap in plastic, and refrigerate for at least 30 minutes.

  5. Bake cookies on parchment-lined sheets for 8–10 minutes until lightly golden; cool completely.
  6. For the filling, cook lemon juice, sugar, egg yolk, cornstarch, and zest in a saucepan until thickened; cool completely.
  7. Whip egg whites with cream of tartar until soft peaks form; gradually add sugar until stiff peaks form.
  8. Spoon lemon filling onto each cookie and top with meringue; broil for 1–2 minutes until golden brown.
