  • 1 pound orzo pasta
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1/4 cup lemon juice (about 1 large lemon)
  • 2 tablespoons lemon zest (about 1 large lemon)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • Salt and black pepper to taste
  • Optional: 1/2 cup crumbled feta cheese
  • Optional: red pepper flakes

Instructions

  1. Cook orzo according to package instructions; drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil. Add shrimp in a single layer; cook until pink, about 2-3 minutes per side. Remove from skillet.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add lemon juice and zest, parsley, dill, red pepper flakes (if using), salt, and pepper; simmer for one minute.
  4. Stir in cooked orzo and halved cherry tomatoes; toss until coated.
  5. Fold in cooked shrimp; heat through for another minute.
  6. Serve hot, garnished with feta cheese and additional herbs if desired.
