  • 3 Tb unsalted butter (softened)
  • 1/4 C cream cheese (softened)
  • 3 C powdered sugar
  • 3 Tb lemon curd (room temperature)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add egg, vanilla extract, lemon juice, and zest; mix well.
  3. Combine salt, baking powder, and flour; gradually incorporate into the wet mixture followed by sour cream until just combined.
  4. Fill cupcake liners evenly with batter and bake for 18-20 minutes or until a toothpick comes out clean.
