  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 4 large eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter and granulated sugar. Combine rolled oats and flour, then press firmly into the bottom of a 9×9-inch baking dish.
  3. Bake the crust for 15 minutes until lightly golden.
  4. Whisk eggs, honey, lemon zest, lemon juice, and flour in another bowl until smooth. Pour over the baked crust.
  5. Bake for an additional 20-25 minutes until set.
  6. Allow to cool completely before slicing into squares.
