Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion (or 2 shallots)
  • 1 large carrot
  • 2 stalks celery
  • 1 clove garlic
  • 4 sprigs thyme (or 1/2 tsp dried thyme)
  • litres / 6 cups chicken stock
  • 250g / 2 cups cooked turkey or chicken
  • 75g / 1/2 cup giant/pearl couscous
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp parsley (chopped)

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Sauté chopped onions, celery, carrots, and minced garlic with thyme until softened (about 5 minutes).
  2. Add chicken stock, cooked turkey, and bay leaves to the pot. Bring to a boil and season with salt and pepper.
  3. Stir in giant couscous (or noodles) and cook for about 10 minutes until tender.
  4. Remove bay leaves, sprinkle with chopped parsley, and serve hot.
