- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion (or 2 shallots)
- 1 large carrot
- 2 stalks celery
- 1 clove garlic
- 4 sprigs thyme (or 1/2 tsp dried thyme)
- 1½ litres / 6 cups chicken stock
- 250g / 2 cups cooked turkey or chicken
- 75g / 1/2 cup giant/pearl couscous
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp parsley (chopped)
Instructions
- Heat olive oil and butter in a large pot over low heat. Sauté chopped onions, celery, carrots, and minced garlic with thyme until softened (about 5 minutes).
- Add chicken stock, cooked turkey, and bay leaves to the pot. Bring to a boil and season with salt and pepper.
- Stir in giant couscous (or noodles) and cook for about 10 minutes until tender.
- Remove bay leaves, sprinkle with chopped parsley, and serve hot.
