Ingredients

  • 2 cups potatoes (chopped into 1-inch pieces)
  • 2 hard-boiled eggs (cut to bite-sized pieces)
  • ½ English cucumber (thinly sliced)
  • ¼ cup corn
  • ¼ cup carrots (small dice)
  • ¼ cup apple (small dice)
  • ⅓ cup mayonnaise
  • 1 ½ teaspoons rice apple vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste

Instructions

  1. Toss cucumber slices with salt and let sit for 10 minutes to draw out moisture. Squeeze out excess moisture and set aside.
  2. In a pot of salted boiling water, cook potatoes until fork-tender; add diced carrots three minutes before draining. Let cool.
  3. In a large bowl, combine cooled potatoes, carrots, cucumbers, corn, apples, and chopped eggs.
  4. In another bowl, whisk together mayonnaise, rice apple vinegar, sugar, salt, and black pepper until smooth.
  5. Pour the dressing over the potato mixture and gently toss until well-coated. Adjust seasoning as needed.
