  • 1 cup flaked coconut
  • 3/4 cup sliced almonds
  • 1 cup almond flour
  • 1 tbsp coconut flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup butter (softened)
  • 1/4 cup Swerve Sweetener
  • 1 large egg
  • 3/4 cup butter (softened) for cream filling
  • 2 cups powdered Swerve for cream filling
  • 1 tsp vanilla extract for cream filling
  • 1 tbsp heavy whipping cream for cream filling

Instructions

  1. In a food processor, blend coconut, almonds, almond flour, coconut flour, baking powder, cinnamon, and salt until the mixture resembles oatmeal flakes.
  2. In a bowl, beat softened butter with Swerve Sweetener until creamy. Add egg and vanilla; mix well.
  3. Combine the dry mixture with wet ingredients and mix until fully integrated.
  4. Chill the dough for at least 30 minutes wrapped in plastic wrap.
  5. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Roll out chilled dough and cut into cookie shapes. Bake for 12-15 minutes until golden brown.
  7. For filling, beat softened butter until fluffy; gradually add powdered Swerve and mixing in vanilla and heavy cream until desired consistency is achieved.
  8. Assemble by spreading cream filling between two cookies.
