Ingredients
- 1 cup flaked coconut
- 3/4 cup sliced almonds
- 1 cup almond flour
- 1 tbsp coconut flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup butter (softened)
- 1/4 cup Swerve Sweetener
- 1 large egg
- 3/4 cup butter (softened) for cream filling
- 2 cups powdered Swerve for cream filling
- 1 tsp vanilla extract for cream filling
- 1 tbsp heavy whipping cream for cream filling
Instructions
- In a food processor, blend coconut, almonds, almond flour, coconut flour, baking powder, cinnamon, and salt until the mixture resembles oatmeal flakes.
- In a bowl, beat softened butter with Swerve Sweetener until creamy. Add egg and vanilla; mix well.
- Combine the dry mixture with wet ingredients and mix until fully integrated.
- Chill the dough for at least 30 minutes wrapped in plastic wrap.
- Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Roll out chilled dough and cut into cookie shapes. Bake for 12-15 minutes until golden brown.
- For filling, beat softened butter until fluffy; gradually add powdered Swerve and mixing in vanilla and heavy cream until desired consistency is achieved.
