  • 2 lbs lean ground beef
  • 1 onion
  • 2 garlic cloves (minced)
  • 2 tsp paprika
  • 2 tsp sumac
  • 1 ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp ground turmeric
  • A pinch of saffron
  • 3 tbsp butter or olive oil

Instructions

  1. Grate the onion and drain excess moisture using a sieve or towel.
  2. In a large mixing bowl, combine ground beef, grated onion, minced garlic, paprika, sumac, salt, black pepper, and turmeric. Mix well.
  3. Chill the meat mixture in the refrigerator for at least two hours.
  4. Prepare saffron water by crushing saffron threads with ice cubes.
  5. Melt butter in a pan and mix in saffron water for basting.
  6. Form kebabs onto metal skewers and grill over hot coals until charred and cooked through.
  7. Brush with saffron butter while grilling for extra flavor.
