These kabobs feature succulent marinated shrimp paired with vibrant bell peppers and onions, creating a burst of color and taste. With only 10 minutes of prep time, they’re perfect for busy weeknights or impromptu gatherings. The robust marinade made from tomato sauce, olive oil, and spices infuses the shrimp with incredible flavor. Plus, you can easily customize the vegetables based on your preferences or what’s in season. Grill them to perfection for a smoky, tender treat that will have everyone asking for seconds.

Ingredients

Scale
  • 1 pound raw shrimp
  • ⅓ cup tomato sauce
  • 3 tablespoons olive oil
  • 2 tablespoons red apple vinegar
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 onion
  • Fresh parsley (for garnish)

Instructions

  1. In a mixing bowl, whisk together tomato sauce, olive oil, vinegar, minced garlic, basil, oregano, salt, paprika, and cayenne. Reserve ¼ cup of this marinade.
  2. Add the shrimp to the remaining marinade and toss to coat. Cover and refrigerate for 20-30 minutes.
  3. Preheat your grill to medium heat and lightly grease the grates.
  4. Thread the marinated shrimp, bell peppers, and onions onto skewers.
  5. Place kabobs on the grill and cook for about 3 minutes per side until shrimp turns pink and vegetables become tender. Brush with reserved marinade in the last few minutes.
