  • 56 pieces boneless chicken breast or 68 pieces boneless chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup + 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 67 wooden skewers (soaked in water)

Instructions

  1. Soak wooden skewers in water for 10–20 minutes.
  2. In a mixing bowl, combine soy sauce, water, red apple vinegar (or mirin), and brown sugar until dissolved.
  3. Cut chicken into 1–2 inch chunks and marinate with minced garlic, ginger, ground pepper, and some marinade mixture for at least 10 minutes.
  4. Pour remaining marinade into a saucepan and simmer until thickened.
  5. Thread marinated chicken onto soaked skewers and grill over medium-high heat for about 8–12 minutes, basting frequently with thickened sauce.
