  • ½ cup peach preserves
  • 2 yellow peaches, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon minced garlic
  • Fresh jalapenos, sliced for garnish

Instructions

  1. Season chicken thighs with salt, pepper, and chili powder.
  2. Heat olive oil in a skillet over medium heat and cook the chicken for 6–8 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté sliced peaches until softened. Stir in peach preserves, soy sauce, vinegar, mustard, garlic, salt, pepper, and red pepper flakes; simmer until thickened.
