Ingredients

  • 2 extra large tomatoes, finely diced
  • 1 English cucumber, finely diced
  • 1 cup red onion, finely chopped
  • 1 red bell pepper, finely diced
  • 1 yellow bell pepper, finely diced
  • 1 cup fresh herbs (parsley, mint or cilantro)
  • Zest of one lemon
  • Juice of half a lemon (to taste)
  • 4 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the vegetables into a very fine dice for the best texture.
  2. In a large mixing bowl, combine the diced tomatoes, cucumber, onion, and bell peppers.
  3. Add the lemon zest, olive oil, lemon juice, salt, and pepper.
  4. Toss gently until well mixed. Taste and adjust seasoning as needed.
