  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine the light brown sugar, kosher salt, vanilla extract, all-purpose flour, ground cinnamon, ground nutmeg, baking powder, egg, and softened unsalted butter. Mix until well combined.
  3. Gently fold in the grated carrots until evenly distributed.
  4. In another bowl, beat together the softened cream cheese and granulated sugar until smooth. Add the egg yolk and mix until fully incorporated.
  5. Pour half of the carrot cake batter into the prepared pan and spread it evenly. Spoon dollops of the cream cheese mixture over this layer before adding the remaining carrot cake batter on top.
  6. Use a knife or skewer to swirl through both layers for marbling.
  7. Bake for about 30 minutes or until golden brown and set in the center. Allow to cool before slicing.
