Ingredients

Scale
  • 1 lb fresh green beans
  • 2 medium Yukon Gold potatoes (about 1 cup diced)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Wash the green beans, trim the ends, and cut the potatoes into bite-sized cubes.
  2. Boil the potatoes: In a pot of salted water, boil the diced potatoes until fork-tender, about 10-15 minutes. Drain and set aside.
  3. Blanch the green beans: In the same pot, blanch the green beans for 3-4 minutes until bright green and crisp. Drain and plunge into an ice bath.
  4. Mix the dressing: Whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper in a small bowl.
  5. Combine everything: In a large bowl, mix the drained potatoes and blanched green beans. Pour over the dressing and toss until well coated.
  6. Serve: Transfer to serving plates and garnish with lemon zest or cracked pepper if desired.
